What to check

Induction — the base must be magnetic; if a magnet sticks, the pan works on an induction hob.
Base thickness — a thick multi-layer base spreads heat evenly and holds temperature when food goes in.
Knives — harder steel keeps an edge longer but chips more easily; never put a knife in the dishwasher.
Care — follow the maker’s instructions — some coatings dislike dishwasher detergent.

Pans and induction

If the kitchen has an induction hob, the pan base has to be magnetic. Simple check: if a magnet sticks to the base, the pan works. Aluminium and copper without a magnetic base do not.

Base thickness

A thick multi-layer base spreads heat evenly and holds temperature when food goes in. A thin pan heats fast but unevenly in patches — that is the most common reason food burns on one side only.

Knives

Hard steel holds an edge longer but is more brittle. Softer steel dulls faster but is easier to sharpen yourself. Never put a knife in the dishwasher under any circumstances — it ruins the edge.
