Gas or charcoal

A gas grill is hot immediately and the temperature is precisely adjustable — right for a weeknight dinner. Charcoal gives a smoky flavour and higher heat but needs time to come up. The choice depends on how often you grill.

Indirect heat

A lidded grill allows cooking with indirect heat — the burner or coals are to one side, not under the food. That makes larger cuts and poultry possible, which over direct heat would blacken outside before the centre is done.

Material

Stainless steel stands up to weather best. Cast iron grates hold heat and leave a proper grill mark but need maintenance. Enamelled grates are lower maintenance.

Built-in

A grill can also be built into an outdoor kitchen, together with a sink and worktop.
